The Bikini Cocktail

Serves 10 guests

To make the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Cocktail (produces 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Method

To prepare the Citrus Syrup: Place all the ingredients inside a pan, bring to a gentle boil, agitating to dissolve. Next, remove from the stove and let it to cool down entirely. Transfer into an sterilised bottle, seal and store chilled, where it will keep for about one month.

For the Batch Mix: Pour all the liquid ingredients in a sizeable container, let it rest for one hour, then filter it preferably using cheesecloth, so it's completely strained.

To serve: Add 85ml of your cocktail base to a mixing glass containing ice, and agitate gently for a minute to chill. Strain to a chilled martini glass or similar, decorate with the cranberries and finish using a light spray with the mandarin essence above the glass.
